MONOSODIUM GLUTAMATE (MSG) is a misunderstood flavor enhancer. Early forms of MSG was derived from seaweed. Sodium Glutamate is the sodium salt of L-glutamic acid, one of the most abundantly naturally occuring non-essential amino acids. Actually, the amino acid L-glutamate is one of the most common amino acids in nature. You can find MSG naturally occuring in many foods such as tomatoes, cheeses, potatoes, mushrooms, and other vegatables. You may be familiar with MSG as a common additive to soups and stews.

MSG has been determined to be safe by the FDA. MSG may also be known as hydrolized soy protein and autolyzed yeast.
